Description

Date truffles are rich and naturally sweetened with dates.  This recipe for date balls is quick and easy to create, satisfying, and super delectable. 

The best part about this recipe is that these truffles are healthy without any added sugar and very few ingredients are required to make them.

You can play around with the nuts, coatings, and even substitute nut butter too. A lot of possibilities are available!

Ingredients:
  • 1 1/2 cup pitted dates (approx. 270g)
  • 1/4 cup almonds
  • 1/4 cup peanut butter (smooth)
  • 1 tablespoon cocoa powder
  • Coatings: (optional)
  • sesame seeds
  • crushed pistachios
  • crushed almonds
  • shredded coconut
Instructions:
  1. Step 1:

    In a food processor add pitted dates and almonds. Blend until small bits remain. 

     

    * If the dates are not fresh, soft, and tender, soak them in warm water. This softens the dates, making them simpler to combine with the almonds.
  2. Step 2:

    Then add peanut butter and cocoa powder. Blend again until smooth paste forms. The mixture will come together after blending for a few minutes. 

    * If the mixture is not holding its shape, add 1-2 tbsps. of hot water. *If the mixture is too sticky, add a little bit of cocoa powder.
  3. Step 3:
    • Scoop out a 1-Tbsp quantity of the mixture with a scoop or a lightly greased 1-Tbsp measuring spoon.
    • Roll into balls between your palms.
    • Dip this circle into a bowl of your favorite coating. Repeat with all the date mixture.
    • Refrigerate until ready to serve in an airtight container.
