Description

A superb, traditional vanilla butter cake prepared with basic kitchen ingredients such as butter, flour, sugar, baking powder, etc. To make the cake moister, it’s soaked with coffee syrup. It’s finished off with a rich coffee glaze and decorated with almonds.

Make this delicious coffee cake and present it as a gift or bring it to coffee gatherings with your friends. It will go perfectly with a nice cup of tea or coffee!

Ingredients:
    Vanilla Sponge:
  • 113 grams Softened Unsalted butter (1/2 cup)
  • 1 cup castor sugar
  • 2 eggs
  • a pinch salt
  • 2 teaspoons baking powder
  • 1 1/2 cup flour
  • 1 teaspoon vanilla extract
  • 3/4th cups Milk (room temperature)
  • Coffee Syrup: (optional)
  • 1 teaspoon Instant coffee powder
  • 3 teaspoons hot water
  • Coffee Frosting:
  • 28 grams softened butter (2 tbsps.)
  • 1/2 tablespoon Instant coffee powder (adjust accordingly)
  • 2 tablespoons Milk (hot)
  • 1 1/4 cup Icing sugar
  • 1/2 cup Almonds (chopped, for decoration)
Instructions:
  1. Step 1:

    Vanilla Sponge:

    • Preheat oven to 180C/350F (fan / convection). Butter an 8" cake pan and line the base with parchment paper.
    • In a bowl add softened butter and castor sugar. Beat the mixture until creamy. Then add eggs, one at a time, and beat well after each addition.
    • Add vanilla extract, baking powder, salt, and sifted flour. Mix using a spatula until well combined.
    • Lastly, add room temperature milk and mix again. Beat the mixture at low speed for about 30 seconds to ensure that batter is completely smooth.
    • Pour batter into a cake tin and bake at 180C for 30-35 minutes or till the skewer comes out clean but moist. (DO NOT OVER BAKE)
    • Cool for 15-20 minutes before removing it from the pan. 
  2. Step 2:

    Coffee syrup:
    In a bowl add instant coffee and hot water. Mix and brush this liquid on cake before frosting.

  3. Step 3:

    Coffee Frosting: 

    • In a bowl add softened butter, hot milk and coffee powder. Whisk until everything is combined. 
    • Add icing sugar and mix again until well incorporated. (Do a taste test and add more coffee powder if desired)
    • Spread this frosting on top and sides of completely cooled cake.
    • Decorate with chopped almonds. Refrigerate for at least 30 minutes before serving. Enjoy! 
    * If the frosting is too thick, add half a tablespoon of milk. * If the frosting is thin, refrigerate for a few minutes before spreading on cake.
